Juno
Located in the charming Østerbro, Juno opened its doors in November 2017. This small bakery is known for attracting people from across the city, who patiently wait in line to indulge in their delicious, handcrafted pastries. Juno was founded by Emil Glaser, a former pastry chef at Noma. Together with his team, Emil has intertwined the best of Danish and Swedish traditions. Juno’s signature pastry is the cardamom snurre… it’s comforting smell will excite your senses streets away. It’s irresistibly fluffy, with melted sugar caramelising its bottom. Their buttery almond croissant, topped with a generous spread of almond cream, is also a personal favourite. Keeping pace with the seasons, Juno regularly jazz up their selection. At the beginning of the year, their semlor buns help us through the cold, with a dreamy combination of rich marzipan, roasted almonds and whipped cream. As the days get warmer, rhubarb tarts and strawberry buns appear. Juno also offers a beautiful range of sourdough breads. The open space in Århusgade allows customers to observe the artistry, making the experience more authentic and enjoyable.

Lille
Refshaleøen is a former industrial site that in recent years has turned into a vibrant area to explore contemporary art, authentic street food and a small gem called Lille. First opened in 2018, Lille is owned by Zara Boreas and Mia Boland. From the beginning, their vision involved creating a space that encourages belonging and togetherness. They source ingredients from local, organic farmers, offering a simple yet tasty selection of sourdough bread and pastries. Their sausage rolls are wrapped in buttery dough, stuffed with pork and topped with fennel. Another delight is the egg toast with tarragon, served on a perfectly moist slice of ryebread. To finish off, the scrumptious cardamom bun is a top choice. Inside Lille you’ll find a small grocery shop where you can purchase quality products such as wine, cheese and coffee. The space is open and inviting, filled with natural light and a rustic charm, while its antique arrangements gives it a homely feeling. If you need a hide-out from the city chaos, you can be sure to experience it at Lille.

Mirabelle
Mirabelle is an organic, independent bakery, located in the cosy Nørrebro quarter. Operating since 2014, it’s part of the Christian Puglisis Relæ Community, a collective of four restaurants, wine traders and the Farm of Ideas. With quality of product at heart, sustainability is intertwined in every aspect of Mirabelle’s production. “We are certified organic and strive to operate in a way that has as little impact on the environment,” says Kerry Farelly, general manager. The selection at Mirabelle ranges from freshly baked sourdough to Roman style pizza, handcrafted pastries and coffee from sustainable sources. Mirabelle is known for its buttery croissants: a perfect combination of crispy and soft. The almond croissant is particularly pleasurable, filled with sweet almond paste and topped with powdered sugar. For a savoury option, the thick and fluffy pizza slices come with toppings such as potatoes or tomato, stracciatella and olive oil. From noon, you can indulge in some delicious fresh pasta and wine in relaxed surroundings. During summertime, Mirabelle also offers raw-milk gelato… very smooth in consistency. To continue the feast at home, you can purchase salumeria and fresh groceries from their micro dairy in Bæst, the sister restaurant next door. Sweet or savoury, you can expect some rich and innovative combinations at Mirabelle.

Brød
Brød is a traditional bakery that’s been around since 2012. Located at Enhghaveplads, a snug square in the Vesterbro district, as the name indicates, Brød offers a delicious selection of quality sourdough. Brød is best known for their soft Berliners, on the shelves every Wednesday. Choose between fillings such as smooth vanilla, salted caramel and strawberry cream. Their intensely flavourful and nutty raw cake is also a must-try… the crunchy bottom of roasted hazelnuts combined with a smooth cacao spread makes a dynamic duo. Their meringue with mascarpone, whipped cream and vanilla, topped with fresh strawberries and elderflower is fresh, delicate and perfectly sweet. For a more traditional experience, their cinnamon bun is a classic choice. Brød also offers some fresh, nutritious salads and rye-bread.

Hart
Richard Hart brought his never-ending creativity and craftmanship to Copenhagen in 2018. With years of experience, the standard at Hart never disappoints. Their ever-changing menu draws inspiration from the bakery’s international team. Hart bakes sourdough loafs through the day, in addition to an amazing line up of sweet pastries. Their most popular pastry is the double baked ‘dream cake croissant’, filled with coconut caramel and covered in roasted coconut flakes. It’s a brilliant twist on the Danish drømmekage cake. The Basque Cheesecake is also a must-try and every Tuesday you can await some unexpected yet delicious combinations of freshly glazed donuts. Luckily, they bake throughout the day so you might be in luck of getting a warm treat out of the oven. Without doubt, Hart will take your taste buds on an adventure.
