Finntastic Blueberry Pie recipe

You know the Finnish summer is at its best when mum makes the first blueberry pie. With the forest berry season upon us, the dessert tables fills with blueberries in various delicious forms. A blueberry pie with crumble topping is easy and quick to make for a summer party.

Crust
100 g butter
¾ dl sugar
1 egg
1 teaspoon baking powder
2,5 dl flour

Crumble
50 g scattered butter
0.5 dl sugar
1 dl flour

Blueberries
0.5-1 l blueberries
0.5-1 dl sugar
2 tablespoons of potato flour

  1. Beat the soft butter with sugar.
  2. Add eggs and stir in the baking powder and flour.
  3. Toss the blueberries with sugar and potato flour and add the mix on the pie
  4. Sprinkle the crumble over the pie
  5. Preheat oven to 200 degrees and bake for 25min
  6. Decorate with strawberries and serve with ice cream
