Recipe: Toast Skagen

This is a classic appetizer in Scandinavia. Toast Skagen is an elegant combination of shrimp and other ingredients on a small piece of sautéed bread and it was originally created by the popular Swedish restaurateur Tore Wretman in the 1950’s. It is very easy to make and sure way to wow your seafood loving friends!
This is what you will need to Veera’s version of Toast Skagen for 4 servings:

400 g Peeled and Cooked Shrimps

1 Hard Boiled Egg

2 dl Crème Fraîche

2 tbsp Fresh Dill Chopped

2 tbsp Fresh Chives Chopped

1/4 Red Onion Chopped (This would be ~ 0,5 dl)

~ 1-2 tbsp Lemon juice (based on your own preferences)

White Pepper (optional)

4 Slices of Bread/Toast

Salmon roe, dill, chives or/and lemon slices for decorations


1. Chop the shrimps, boiled egg, herbs and red onion,

2. Mix all the ingredients together in a bowl. Check the flavour and add salt, pepper or lemon juice if needed.

3. Toast the breads and spread some butter on them after toasting.

4. With a large spoon spread the shrimp mixture on top of the toasts. Decorate with your favourite ingredients.
